Hope all is well with you and your family. My name is Rachelle "Rae" Thompson and I own Shugga Rae's Catering. I am a graduate of the LeCordon Bleu Culinary Institute (2005). We have professional experience organizing both large and small scale gatherings/events. Smooth management of food service staff, including cooks and service is what we take pride in. Our team will go above and beyond in their quest for customer satisfaction and happiness.

What is your typical process for working with a new customer?
Our interaction with new customers is very easy and quite simple. We first obtain basic information, perform an estimate, and then work on the job while keeping the customer up to date in every step of the way. With us, there is no guess work.
What education and/or training do you have that relates to your work?
Strong communication and customer service skills. Knowledge of safe food handling and preparation techniques. Problem-solving, conflict resolution, and business management skills. Creative thinking and design skills.

We commonly use a standardized method that multiplies food costs by three to come at the final menu price; sometimes we use a percentage markup method, such as 20 to 40 percent on top of food costs.
How did you get started in this business?
From the beats of my Great-grandmother (Virgie Lee Thompson) who was a Cafe' and Real Estate owner. Listening to all the stories of her "Good Eats", people traveling through town, stopping at Ms. Virgie's Place has been inspirational all my life. My Dad's eldest sister followed in her footsteps and I tagged right along. It's the passion of loving and catering to people of all walks of life.

What advice would you give a customer looking to hire a pro in your area of expertise?

What questions should customers think through before talking to pros about their needs?
Budget is always at the top of the list. Menu type, as well as possible allergic reactions from the menu choice. It's always best to find out food preferences from individuals. Can the food be prepared on the premesis, guest count, full service or buffet style, etc.
