Working in the restaurant industry for over a decade has taught me that every plate is special, there will always be minor differences between every plate that goes out, and I thrive on that. Making every dish unique to the person eating it, working with the imperfections that come with cooking to make the plate look, and taste, perfect. Because if it's looking good it's more likely than not going to taste good.
I worked in high end steak houses for around 5 years, which has brought a specialty for grilled foods, I can grill a perfect steak almost every time. However I'm always looking for a new challenge. The other half of the decade I have spent working everywhere from breakfast foods, to Mexican, to barbecue. Let me tell you barbecue tacos are one of my favorite things to make for parties, they make really fun and different snacks.
