Cuisine to me is not just about food, it’s a way of life, it’s culture, its community. Growing up in such a close yet diverse community inspired a lot of my way of thinking and outlook on how food can bring individuals together. I fell in love with cooking from my mother and my passion grew deeper the more I explored the world of cuisine. I have been in this industry for over 15 years and still everyday, I am learning something new. I love what I do because not only does it give me room for creativity, but allows me the freedom of expressing myself through the art of cuisine. Through my years of being a chef I have came up with ways to showcase my Caribbean cuisine with a twist. The twist comes from the people I met and places I have been, the food I’ve tasted in different cultures, and my own hint of taste that no one can find anywhere else. I love hearing that people are craving my food but can’t scratch the itch because there is nothing like it. This tells me how unique and inimitable my cuisine is.
