I have been cooking professionally for 15 years. I started my culinary career working at a deli / bakery with my mother. From there I decided to take culinary courses in high-school which then led to me discovering my passion. I received a scholarship to go to Culinary school where I then apprenticed as well. I spent the early years of my career being a sponge in many kitchens between Madison, Milwaukee, and Chicago. I truly believe that cooking is not just an act of love but a labor of love as well. The love and attention can be felt in any dish you may eat, as well as the atmosphere. I feel as though dining can be much more of a experience than just eating. From stories, to music, to good wine, and laughter. A great meal can bring us all together. I find myself always searching for amazing purveyors and buying from farmers as much as possible. Sustainability is a main priority for me and being able to preserve the many wonderful ingredients that the seasons may bring us. I hope that through my experience I am able to bring that to whatever table it is that I am serving. I have a deep general background on most food types and origins with my expertise stemming from modern American, French technique, Italian homages and many abundant flavors found in East Asia. I aim to satisfy not just taste, but all senses.
