Criosho (krē ō shō) is based on the Spanish word criollo, which refers to local or homemade food. In essence, it means food made with care and love at home, using local ingredients. Criosho represents homemade, South American flavors. Charred, savory flavors created over an open flame. Simplicity, quality, honesty. A modern take on traditional techniques.
Matias started Criosho after honing his skills for over 15 years in several restaurants in the D.C. area. He wanted to focus on the tastes and flavors of Argentina, as well as other parts of South America. Matias’s goal is to take you on a culinary tour of different regions of Argentina, offering an authentic experience of its many cuisines.

What is your typical process for working with a new customer?
First we set up a phone call meeting to talk about service and menu options.
Once menu is approved, we take our grill and cater on site.
