What education and/or training do you have that relates to your work?
Fat Charlie's started out as bbq competition Cook team and started catering just for friends to offset the cost of barbecue competitions as they get pretty expensive and started catering more and more till we had to get out of the competition circuit. I guess in short our hobby turned in to our job how cool is that

What advice would you give a customer looking to hire a pro in your area of expertise?
Always get what you want and not hire a caterer that can't give it to you. You are the customer and you are the one paying so don't settle for Lee's because it's a special day for you and your loved ones so make it a memorable day that you will talk about for years to come
What questions should customers think through before talking to pros about their needs?
What you want to serve how Many people you are having and the budget you have for the event and look at your menu as a whole and not individual items so you get a complete meal and not have all starches or all veggies make a holsome meal
