Good Chefs are born Great Chefs are curated! I am a foodie by nature. Growing up watching my mother make her homemade traditional Jamaican dishes sparked my initial interest in the Art and Science of Culinary preparation. Living in London my mother used traditional and sometimes experimental local sunstitutes to recreate the dishes she grew up on in the mountains of Jamaica. Today I take that same curiosity and nostalgia stance when creating dishes for the London Chippy. I hope to continue and extend the same joy and comfort that we got from my mother’s Cooking
