Hi, I’m Tamika Schaefer, owner and operator of SCHAEFER' FLAVAS DBA Meeks Taco-Dogs Delights. With over 25 years in the restaurant industry and 10+ years in management, I bring a deep understanding of food service, flavor development, and customer satisfaction to every meal I serve.

My background includes hands-on training in high-volume kitchens, food safety, team leadership, and front-of-house service — all of which I now channel into running a food trailer that’s clean, professional, and full of good vibes. I’ve recently expanded my passion for hospitality into this mobile kitchen, delivering big flavors in every taco and hot dog we serve.
