Customers and their happiness comes first.  Their Goals must be achieved.They must at all times be happy and Satisfied from the beginning to the End.  I'm the only Chef  in San Diego, that brings Happiness to my Catering in San Diego, by being able to cater Barbeque and Jamaican Cuisine in the same Catering order. . I've been in the Catering business since November 1991. Reached several miles stones that I am very proud of. Such as Catering on the USS CONSTILATION, I've Catered for 8000 Guests at Superbowl Tail Gait Party at Qualcomm Stadium. I've Catered for Danny Glover, I've Catered for Magic Johnson at the opening of his 24-hour fitness in College Grove, I've being Rated The Best BBQ and The Best Jamaican little Restaurant in San Diego. I've received the Silver Fork Awards From San Diego Home & Garden Lifestyle Magazine. I've have awards from the City of San Diego, the Police department of San Diego, The Marines San Diego,  the Woman Church United. I've Catered for Share and The Rolling Stones and lots of Reggae Concerts in San Diego at the Former Sports Arena. And Lots more.


Serving the People of San Diego, knowing that they are are very satisfied with every product that we produces and knowing that they are having some of the best Jamaican Cuisine and BBQ Soul food in San Diego. Giving back to the Comunity like I have been Doing over the years.  

I have 29 years of experience in the Food and Beverage industries, which has taken me to the highest heights one could ever expect to reach. I have been rated the most Excellent BBQ and Jamaican Restaurant in San Diego by Zagat Survey. Restaurant Review by Stephen Silverman has Compared Fargo's BBQ and the Prince of Whales with our Spellbinding meals. Mr Silverman wrote if Fargo's in Encanto is real life, then the Prince of Whales in Coronado is pure fantasy.  Just to name a few of the Clients I have catered for.  1**The USS Constillations Ship North Island. 2**. catered for 8000 people at Super Bowl XXXll   Qualcomm Stadium.  3** I have catered for Magic Johnson, at the opening of his 24 hour fitness in College Grove. 4**. I had a permanent food booth inside the former Sports Arena , which gave me the opportunity to catered for Artist such as Sheer at her Concert, the Rolling Stone Concerts as well as all the Gulls games. and every event that was held there, especially the Bob Marley Two Days Reggae Concert which was a yearly event. 5**. I have catered several events for Movies Stars which was alway held inside the San Diego Aero Space Museum, Balboa Park. 6** I have Catered on Several Occasions for Mr Danny Glover.

What is your typical process for working with a new customer?

I love to break the Ice with a new customer. An email or text is not enough, a phone call is always necessary, it is always nice to hear the voice of person or person's you will be working with. The Positive Vibes that both parties can pass on to each other is worth a thousand dollars, it is very important to break the Ice, either in person or on the phone. I have done lots of long distance catering. If that is not possible, I would like to communicate by emails. Explaining most of the details of the event, such as date's and time of the event, number of guest. Style of setting up, Island or American settings, buffet style or Individual plates already put together or Serving from The Food Truck.    

What education and/or training do you have that relates to your work?

Thirty Years of being the owner of Fargo's BBQ/Jamaican Cuisine. Working for 50- 70 Hours per week. I took it from the little Hole in the Wall in Encanto to the Best BBQ in Town and as one of the Area's Top Restaurant Rated "EXCELLENT' by Zagat survey and others.

I Work with the Market Value of the Products, at the time I communicate all depends where the products are coming from.

How did you get started in this business?


Cooking is my passion; I actually got started back in Jamaica. I used to make Peanut Butter cookies on my Birthday and sell to my friends from I was eight years old. My mother was a Chef and she was the best Baker in the entire Parish of St Ann. I was always at her Tail doing anything she did. In addition, I would do the same to my Cousin who was the head Chef at the Elementary School I went to, at Clapham Primary School. Parish of St. Ann. 

What types of customers have you worked with?

To List a few:  Party Planners West. Catered for eight thousand at QUALCOMM Stadium

Magic Johnson at the opening of the 24 Hour fitness in College Grove

Weddings all over San Diego (three hundred at Fiesta Island) 

 Birthday Party for one hundred and Fifty (Back Yard Party)

We have catered a wedding on Radio Show (Roger HedgeCock Radio Show).

Schools, Churches, Fire Department.  San Diego Police Department,

A Taste of San Diego, at the Half Moon Hotel Harbor Island San Diego  

We worked the Del Mar Grill Festival, and donated all proceedings to "Christie's Foundation for the Hospice Kids " featured on Chanel 6, 6:00 AM TV show.  

 A Restaurant Review Compared Fargo is with the Chef of Del Coronado as Worlds Apart. The review said If Fargo's is the Real Deal then the Chef of Del Coronado is Fantasy. 

Fargo's is the only woman owned Food Truck, which sells American/Jamaican 

Before the Covid-19, we worked Places like MCRD, Apartment Buildings down Town San Diego and in La Jolla   


Describe a recent event you are fond of.

  My own Birthday Party the IO did at Shelter Island last year for My 70th Birthday with a Live Steel Band Lots of Food and Drinks and Many of my friends from all over came to enjoy the Afternoon. We even had friends and relatives flew in from Jamaica. Did not know it was the last Birthday Party like that for a long time because of Social gathering

The Last two event were the Luncheon I donated to 65 Doctors and Nurses at Kaiser Permanente. I also Donated 45 Dinners to an Apartment Building that have always supported my business. I Donated to the Skyline Police and Department #51 Fire Department at Skyline Division in San Diego

What advice would you give a customer looking to hire a pro in your area of expertise?


In this time until the World is back to Normal with this Social Distancing, Please Wait to have any big Parties, But I will be willing to do individuals plates put together either on the Food Truck or at the Fargo's Kitchen and have it delivered in Gambro’s will be hot and ready to go

What questions should customers think through before talking to pros about their needs?


Their Budget and the amount of Guests. I have found out that Customers will want everything I have to offer on the Menu, and will want to invite everyone they love and know. However, the prices can be a little expensive especially when they are ordering from both the BBQ Menu and the Jamaican Menu.
