What is your typical process for working with a new customer?
Upon contact, a conversation about the menu takes place and once the client is set with the menu, other specifics are covered such as date and time of event,, number of guests, type of service desired, time table for access to venue and break down time. Once all agreed on, contract is provided to guarantee the date chosen for the client is booked and that day belongs to the client. A deposit is required as well to lock in that specific date.

Graduate of AIMS Culinary Academy in 2000.

I would advise a personal meeting and have plenty of questions. Don't be afraid to ask for references.
What questions should customers think through before talking to pros about their needs?
The most important thing to consider is your budget. Finding a professional to can work with in your budget. Someone well versed in different types of cuisine.
